Neil's employees have supplied us with corn, watermelon and blueberries this summer. We have enjoyed them all. I couldn't stand seeing those blueberries just sitting there anymore. So on Friday, we made some blueberry bread. The last bit disappeared yesterday. Parker and I made another batch just now. It is so simple. I made just half the recipe for us. Looks like I needed to do the whole thing.
Blueberry Bread
4 eggs
2 c. sugar
1/2 cup oil
1 tsp. vanilla
3 c. self rising flour
2 c. blueberries
Mix by hand in a large bowl~ sugar, eggs, oil and vanilla. Add 2 1/2 cups flour to mixture. Combine 1/2 cup flour with blueberries and then add to mixture. Bake in greased and floured 9x13" pan at 350 degrees for 25 to 30 minutes.
I cooked mine a little longer. Enjoy!

dee-lish!! I will have to check out the White Pines blueberry bushes and see if I can't make us some of this bread. You know we have some bushes here, but no one actually knows who they belong too. LOL!!
Thnx for the comment about Greg's necklace. He just loves his "crabclaw" necklace. I should make it black and white and see what it looks like!!

Heidi, Thanks for the recipe. Someone gave me some blueberries and I made cobbler yesterday but Macy wasn't very impressed. She wants me to make blueberry muffins so I think I will make the whole recipe and put some in cups.
Blueberry pancakes are another idea....
